Soups are not just for winter. A chilled soup is refreshing on hot summer days, when you want a light meal that is still very nourishing. Many chilled soups are either red or green, so are perfect for Christmas Day.
Chilled cucumber and avocado soup
- 1 cucumber
- 1 avocado
- Handful of coriander leaves
- 3 spring onions
- 1 large lime
- Dash of fish sauce
- 1 cup of coconut cream
Place in a blender one peeled and de-seeded cucumber, one avocado, a small handful of coriander leaves, three spring onions, the juice of a large lime and one cup chilled water. Add a dash of fish sauce and salt and pepper. Blend until smooth. Mix in one cup coconut cream and check seasoning.
Serve chilled. Garnish with tiny cucumber cubes plus grilled prawns and pea shoots if desired. Serves 8 in tasting glasses.

Broths & stocks
- Homemade chicken broth – bone broth is made mostly from bones, with some meat for flavour
- Chicken stock (especially for the GAPS or other gut healing diets) – stock has more meat than in it
- Homemade vegetable broth
For any recipes that contain stock:
- if you’re on a gut healing diet, replace any vegetable stocks with meat or chicken broth or stock
- if you’re on a plant based diet, replace any meat stocks with a homemade or good quality bought vegetable stock
